Spicy Chicken Lettuce Boats
The idea of using lettuce as a vessel for shovelling delicious things into one's mouth is nothing new, but it is a handy weapon to have in your weight loss arsenal. There are loads of things you can do with a sad bit of iceberg or romaine lettuce; whether it's these Virtuous Vietnamese Lettuce Wraps, or swapping the tacos in this yummy Mexican prawn recipe for something even more saintly. I had some leftover spicy roast chicken (whole chicken, whizz ginger, chilli, fennel, garlic with coconut oil and smear it all over for roasting) that needed to be used up, so I shredded it down and served it with minty yoghurt and a chopped salad of tomato, raw onion, red cabbage, cucumber and coriander with plenty of lime. Chuck some big bits of lettuce leaves in a bowl and you're good to go.
This would also be pretty transportable to work if you're in need of healthy al desko lunches - just make sure all the components stay separate as the lime dressing will wilt the lettuce by 1pm.
You can have plenty of these as the only real calories in this come from the chicken. With skin removed (I know, upsetting) a tablespoon of shredded chicken is under 20 calories. A few tablespoons of fat free natural yoghurt isn't exactly going to start tipping the scales either.
